I have a healthy bran muffin recipe that I just love. On a Saturday morning I'll quadruple the recipe and make 4 dozen muffins. Pop two into a sandwich bag, put all the sandwich bags into a gallon freezer bag. When I am running short of time or need a healthy snack, remove a sandwich bag. Micro for one minute or just eat it at work.

The week is so busy, that I prepare the main part of Monday-Friday's meals on the weekend, then freeze them for my husband and I. At dinner I simply re-heat and serve with fresh or steamed veggies. FAST & EASY! 12302286254
I also make a dozen muffins on the weekend, with protein powder and fruit in them for a fast breakfast on the go each morning.
The basic breakfast of eggs, bacon, and cheese can be presented so that it appears to be quite different meals. Chop up your veggies and bacon and heat in skillet, pour over the scrambled eggs, put lid on top, put on low for 20 mins is a fritata. Add cheese at the end of cooking. Or line a muffin tin with cooked strip of bacon, add the scrambled eggs, bake for 20 mins at 400 -- now you have a breakfast muffin. Top with cheese. Or keep it simple and just scramble the eggs and bacon
