I love fresh vegetables and quite often eat them raw after picking them (we grow a lot of our own). But sometimes you want a bit more oomph! Especially if you're hungry. Buy a ready made curry powder from an indian specialty shop (there are heaps to choose from!) and throw it in with whatever veggies and a tin of chopped tomatoes. Serve with rice. You're well under 300 cals per serve, so enjoy with half a cup of cooked rice. Delish!
