Try using fat free cream cheese (available at Walmart) instead of butter and cream. One serving is 30 calories and of course no fat. It's really good on a baked potato instead of butter, and I have also used it to make Alfredo sauce and to make the creaminess for chowder soups.

I eat lower carb to control Type 2 diabetes (successfully!). My breakfast is frequently 2 bran wafers with cheese. I discovered that Neufchatel cheese is very similar to cream cheese but lower calories and fat. For a 2 Tablespoon serving, Neufchatel Cheese: 80 cal, 1 carb, 6 Fat, 2 Protein. Cream Cheese: 101 Cal, 1 carb, 10 Fat, 2 Protein
The downside is that neufchatel can be difficult to find. My local Giant carries their own generic brand next to the cream cheese.
