I see so many people shunning pizza, as I am looking through the site.
If you love pizza, portabello mushrooms is your secret to still having pizza! I take the stems off 2 of largest mushrooms I can find. I bake them at 400, about 20 minutes. You want all the water to evaporate, if they still seem wet out of the oven, blot them with paper towels. Next, pizza sauce about 1 tsp up to 1 tbsp. Dice finely veg, meat, grate mozzarella. Mix together and pile on caps. Bake til bubbly! yummy!
This works real well, long as it s not still too wet. The mushroom base condenses, becomes like a chewy type crust. This way you can have your pizza guilt free!

okay so we all love pizza and especially home made ones but sometimes we want a light pizza without the heavy base. I suggest an alternative, a zucchini crusted pizza base. Here is the recipe: 2 cups grated zucchini 2 eggs, beaten 1/4 cup flour 1/2 cup mozzarella cheese, grated 1/2 cup parmesan cheese, grated 1 pinch basil or 1 pinch marjoram or 1 pinch rosemary (optional) 2 tablespoons olive oil YUM! great way to cut down carbs

I love love love these sandwich rounds! Use them for hamburger buns, sandwiches, toast, and PIZZA! Top a round with 1 T pizza sauce, sprinkle with low fat mozzarella, add your favorite toppings and heat in oven. Yummy & low cal to boot!
When eating pizza I have found that taking clean paper napkins and gently blotting the top of your pizza will wick up a fair amount of oils . The last time I had pizza at our favorite place I used 3 napkins on an 8 inch square pizza. I figure any oil I take off the top of my pizza is that much less oil that I am not taking in.
