Iceberg lettuce has a bad reputation. Which is a shame! So, here are some reasons why you should invite iceberg back into your healthy eating plan. 1. its inexpensive 2. mostly water (= hydration) 3. mostly fiber (= more fiber!! -wink, wink!) 4. adds bulk to regular salads (i.e. more food!! yay!) 5. neutral taste (you went to the trouble to make your own salad dressing you should at least taste it!) AND 6. memories (lunch box sandwiches! yum!)
Those are just some of MY reasons for loving iceberg lettuce, I'm sure there are more "strange" people out there. So next time you go to the store, don't walk pass the humble iceberg! (It's starting to think you don't like it!)

Buy a head of iceberg lettuce, take off only the outer leaves and discard (the nasty ones). Do NOT remove the core (as my mother taught me), keep the lettuce inside an air tight bag and tear off only what you need. The lettuce will last up to a week or more, saving you money. It took me 20 years to figure this one out!
Romaine has better nutrional value than iceberg if you want to maximize your health benefits. Romaine contains vitamin C and beta-carotene,vitamin A, vitamin K, folate, vitamin C, manganese, chromium, vitamin B1, vitamin B2 and the minerals like potassium. Helps lower cholesterol, may fight cancer cells, brings down high BP. Much better than Iceberg lettuce.
