Cauliflower Is My Best Friend



I tried a recipe where you substituted cooked cauliflower for mashed potatoes and it was wonderful. Now I substitute cauliflower in all my potato recipes. So I thought, why not see what other things I could substitute cauliflower for that would be as good. I now use cauliflower as a substitute for pasta, with a low fat pasta sauce it is every bit as good as spaghetti or macaroni. This saves hundreds of calories and is really good.

More Information:

To substitute for mashed potatoes, just boil up a head of cauliflower, drain and mash. For a pasta substitute cook flowerettes, drain and use your favorite low fat sauces. Top with a bit of Parmesan. emoticon

Try this recipe: bag of frozen cauliflower cooked and drained; 1 lb bag of yolk free egg noodles cooked & drained, 2-3 garlic sliced; 1 onion sliced; 1 tbsp butter; 1 tbsp olive oil; 1/2 cup kalamata olives,pitted and quartered; 1/2 jar roasted red peppers, drained, sliced & chopped. Sauté onion and garlic in oil. Add butter & remaining ingredients. Season to taste with salt & pepper - by DEWEYGAL
  • Great idea! Everytime I eat califlower I lose weight. I love it mixed with mashed potatoes and garlic. Not only is califlower high in nutrition,it has fiber. I heard you can make potato salad by substituting califlower for the potatoes, pizza crust and even in stuffed peppers as a substitute for the rice. I enjoy it in soups too as well as steamed. - by SUNSHINE6442
