I tried a recipe where you substituted cooked cauliflower for mashed potatoes and it was wonderful. Now I substitute cauliflower in all my potato recipes. So I thought, why not see what other things I could substitute cauliflower for that would be as good. I now use cauliflower as a substitute for pasta, with a low fat pasta sauce it is every bit as good as spaghetti or macaroni. This saves hundreds of calories and is really good.
To substitute for mashed potatoes, just boil up a head of cauliflower, drain and mash. For a pasta substitute cook flowerettes, drain and use your favorite low fat sauces. Top with a bit of Parmesan.

After cooking the 12 oz. bag of cauliflower, I added minced garlic, one Laughing Cow Light Blue Cheese and 2 T of non-fat Greek yogurt. I mashed it using a potato masher(and mashed it and mashed it.) It was just as good and just as comforting as mashed potatoes for less than 75 calories per serving.
I am going to try using a potato ricer which will give the cauliflower a fluffier texture.
