Xylitol is a sugar alcohol. It is approved as a dental supplement, helping to prevent cavities. It has about 1/3 of the calories of sugar and it’s sweetness is almost identical - spoon for spoon – to sugar. It may have a laxative effect – start slowly. I have read that you cannot replace all of the sugar, because sugar alcohols do not caramelize like sugar, nor does it retain moisture as sugar does, so baked goods come out funky if too much sugar is replaced.
