Boil potatoes with skin on then when cooked, the skin will peel right off. Much easier than peeling potatoes. Use a tiny bit of evoo, vinegar & add herbs for flavor..even a boiled egg for protein. Skip the mayonnaise.

Last week my family wanted potato salad. Now, I love mayonnaise and my potato salad is pretty simple - potatoes, mayo, green onions and salt and pepper = yum. I am counting my calories and don't really have a lot of room for mayo. So....after reading and being on Sparkpeople these past few months I decided to try using some nonfat yogurt for some of the mayo. I did it and my family didn't even notice - and boy the calories I saved.
Here's what I did:250
2 lbs. of potatoes (red with skin on look pretty), cooked and diced to the size you like. 3 to 4 oz. of nonfat yogurt 2 Tbl mayonnaise 1 bunch of green onion, cleaned and chopped. salt & pepper to taste
Mix the mayo and yogurt together. Toss with balance of ingredients and chill for a bit.
