Saute Onions In The Microwave Before Using The Saute Pan

I always precook Onions and other vegetable in the microwave oven before adding them to the sauté pan. I use one large Onion and it usually takes 5 minutes. Check at that time to see if they are soft and translucent. Carrots cut in pieces also do well this way they keep their bright Orange color. You can go on to Caramelize using just broth if you stir often. This way gives me the best Onion soup or stock for onion Gravy it gets to a deep brown. I love to eat French Onion soup in the winter

Cut 2 boneless chicken breasts into strips. Cut 1 red, 1 green, 1yellow and 1 orange bell pepper into strips, slice up one onion. Saute the chicken in 1-2 T. olive oil, remove to a plate, add peppers and onion to the pan along with 2 T. balsamic vinegar, saute until peppers start to soften, add chicken back to pan and cover and simmer for about 5 min. Just before serving add a little more balsamic vinegar. YUM YUM and so pretty!!!
