Eggplant vegetable contains low levels of carbohydrates and high fiber levels. Great for diabetics to reduce glocuse level and great for dieters as its low in calories and high in vitamins and minerals

  • I LOVE eggplant! Great just roasted in very hot oven( cut in half, flesh side down) -- then scrape from skin. Be sure to include the syrup that comes from the caramelizing! Add minced fresh garlic and use a dip! Eggplant "Caviar"! emoticon - by LDUQUETTE1
