  • I LOVE eggplant! Great just roasted in very hot oven( cut in half, flesh side down) -- then scrape from skin. Be sure to include the syrup that comes from the caramelizing! Add minced fresh garlic and use a dip! Eggplant "Caviar"! emoticon - by LDUQUETTE1
