Use ground turkey instead of ground beef. Mash potatoes, use fat-free milk instead of whole milk & trans-fat-free margarine instead of butter. Mash steamed cauliflower into your potatoes. Steam green beans & season with a little curry & pepper, then top with a few slivered almonds instead of butter, or do a stir fry with any combination of green beans, broccoli, carrots, zucchini, onion, snow peas, red, yellow, green peppers, baby corn and then sauté in low-sodium soy sauce with garlic.
