Don't worry, and don't throw it out. Bolted lettuce is bitter to taste, but you can tone down that bitterness by soaking the cleaned leaves in lemon juice and water for a few hours. After drain the water rewash the lettuce and dry it. No need to waste the plants you tried so hard to grow. Eat them and enoy the added flavor.
