Don't throw food away. Enjoy your leftovers tomorrow for lunch or, yes, breakfast. You made it healthy to begin with; it will be healthy all over again. Every time you chunk food in the garbage, envision dollar bills you're throwing out, because that's what's really happening. If you hate leftovers, shop for and prepare exactly what you'll eat and no more. What to do with leftovers? Eat them!

  • My husband and I have had some pretty interesting breakfast by adding scrambled eggs to sauted leftovers. Chinese eggs, mexican eggs... emoticon - by BIGTEXASDREAMER

I freeze leftovers often. It's just my husband and I in the household, but I always make enough to eat the same thing for a day or 2 after. If we grow tired of the dish, I portion it out into an individual serving, so that when I don't feel like cooking or my husband needs a meal to take for lunch it's ready and waiting. It's like having a healthy frozen dinner. - by ROSEBUD8379
