Because Stress keeps coming back. Your mind does not like being stressed, and will do what it has to, to calm down. Junk food is high salt/sugar, which numbs things down a bit, to make it easier to deal with. Since we cannot numb the situation, we numb ourselves. Check it out sometime, see how you feel after eating junk. Calm? Happy? Content? Best Defense, take a walk, breath, or carry healthy comfort snacks. I'm pulling for you!

Why I think fruit is crucial to keeping a healthy diet
Aside from Fruit being great for you, the real reason I try to keep fruit stocked at all times is it keeps me from eating sweet junk food. I didn't have any fruit last week and everyday I found myself eating bagels w/ cream cheese in between meals, gummy bears, etc. Once I restocked on fruit, those cravings went away and now I've gone back to snacking on fruit. Mango is my favorite sweet treat.
The way I eat the best and stay away from junk food is that I clean my fridge, freezers and cabinets out and throw away or give away the junk food. I restock my kitchen with healthy food and resolve to not let myself bring the enemy/junk food back into home. Out of site/out of house, out of mind!
