Cactus or "nopales" are cultivated from prickly pear plants. Tasting similar to a slightly tart green beans or asparagus, they contain beta carotene, iron, B & C vitamins & calcium. You can buy them jarred in the ethnic section of your market. Try adding them to salsa, scrambled eggs or salad.
