My nutritionist told me that menopausal women who have been overweight for a while have often become insulin resistant, and that the way to combat this is to consume 120 grams of protein per day for a while. I found it impossible to hit 120 grams per day without blowing my 1200-1300 per day calorie limit. My solution was egg whites, which have only 17 calories each but have 3.5 grams of protein.
I take several eggs and put the whites in one small pyrex dish and the yolks in another. I whisk the whites and microwave them for under a minute. When cooled I chop them into squares and use them in salads or just eat them. I add water to the leftover yolks and give them to my dogs for a healthy treat.
