I like to set the table, placemats, pretty dishes, glasses, cloth napkins...even when it's just me! It makes me focus on the experience, rather than just the food...and I eat slower, like when I'm in a nice restaurant.

I find something that really makes cardio exercise much more enjoyable is to first improve flexibility, then strength, and then increase cardio.
Since cardio exercises are associated with weight loss, it is easy to become focused on the scale and forget about the other two aspects of fitness. Being flexible and strong makes cardio exercise much less of an ordeal so walking, biking, etc. becomes more pleasant when the body moves with ease.
