I find it is so much easier to eat healthily throughout the day, if I sit down for a proper meal, that is based around a good serve of vegetables. In summer, this would mean basing the meal on a lovely salad, and in winter making yummy low fat, high vegetable soups or even ratatouille. You can then accompany that with a piece of wholemeal bread and a protein - cheese, lean meat or some peanut butter.

When you start eating more vegetables, especially more of the leafy green kind, and most especially if you never really ate that many before, TAKE BEANO (or something similar). Otherwise, you may end up with really bad gas (and the bloating and cramps that go with it).
Taking something to help prevent the gas ensures that you won't give up on eating more vegetables right after you start.
