I've learned that I have trouble saying no to left overs. So my solution has been to take and cook up big huge meals....yeah I know that seems the wrong thing to do......but I cook up huge meals and then I divide it all up into food saver bags to freeze. So that instead of having left overs in my fridge calling my name it's frozen in homemade portion controlled tv dinners. It keeps me from over eating and keeps the guess work out of measuring my food out every day.
This tip is of course for freezable items. Say your meat and cooked veggies. Example: Make a meatloaf and divide it up into serving sizes with your green beans and freeze, then add your salad after you heat the meatloaf and green beans.
Pre cooking lean meats (watch for sales!) then freezing them in food saver type bags saves time, makes meal prep easy! Lean ground turkey, BBQ'd London Broil or boneless/skinless chicken breast thinly sliced. Freeze into meal-sized portions for your family (my bags serve 2)
5 pounds of 99% lean ground turkey... cook it into crumbles. Cool, then spread out on a sided cookie sheet. Cover with plastic wrap, freeze overnight. Portion out into 10 freezer bags (8 oz each). Seal into ziplock freezer or meal save- type bags. Thaw bag in hot water to use in many recipes
I love frozen convenience items like diced onions & green peppers or frozen fruit but they can be costly. My money saver is to shop my local farmers market or fruit market, then buy, chop and freeze my own produce in snack size bags. The smaller bags are perfect for single servings plus doing this saves money and I get a lot more.267
