My mother always cooked potatoes with skin on. Then she allowed them to cool just a little and peeled the skin off with fingers-OUCH I saw a variation of this, Before cooking score through the skin round the thin part of-the potato. Boil as usual. Meanwhile set up ice water bath. Remove potato from water and plunge in to ice water. The skin will slide of in two pieces with just a little squeeze, I always did Tomatoes this way but score after dipping in hot water. Same family same way to peel.

Boil potatoes with skin on then when cooked, the skin will peel right off. Much easier than peeling potatoes. Use a tiny bit of evoo, vinegar & add herbs for flavor..even a boiled egg for protein. Skip the mayonnaise. 4
Boiled Sweet Potatoes are difficult to skin cleanly.There is however an easy way to do this.Plunge the unskinned boiled Sweet Potatoes from the boiling Water into very cold Water.The Skin will turn loose and wrinkled and peel off easily with no fuss at all!!
Mama always taught me to peel potatoes and carrots. But I've found you can save time and add fiber by just giving them a good scrubbing especially carrots. Potatoes can be chopped and fried and you'll never notice the peelings. I've found with carrots you can shred, boil or roast with no problem.
