Mushrooms have a great way of absorbing the oils whilst they cook meaning you add more! I have found that by boling them instead they not only keep their shape but there is no oil. If you want that just fried taste then after boling remove dry and add to a hot pan with oil as they are full off water they will absorb very little if not any oil.

Mushrooms contain natural insulin & enzymes that break down starch & sugar in foods. You will benefit from vitamin D, the B vitamins, Iron, Calcium & potassium. Mushrooms are extrememly low calorie, are fat and cholesterol free. Popular choices are Portabella mushroom burgers or mushrooms stuffed with crabmeat, or raw with a dip. If you have Candida or frequent yeast infections avoid mushrooms of any kind becuase they are a fungus that could promote yeast which is a single cell fungi.
If you have a package of mushrooms that's almost too old to use, sauté them in 1/2 Tbl of butter with 1 chopped onion. When they're almost done, add 1 Tbl white wine, and cook until all the liquid is absorbed. Repeat wine addition 1-2 times until mushrooms seem to have absorbed all they will take. Really good as a topping for meats.
