My DW and I really enjoy a healthy dinner with beans. We make Navy Beans and Ham, Plain pintos that later turn into Burritos and especially; bean stew.
We always make a full pot, eating some today and putting back some for tomorrow. What's left is frozen in 2-cup containers which are easy to take out and have veggies and protein, too.
Both quick and filling. You can add other veggies, make a quick salad or even a healthful fruit dessert because you are saving on the high cost of meat.
