Fiber is like a sponge. It soaks up fat and sugar and slows absorption. Fiber lowers the glycemic load in your diet. Add Beans, barley, rye, brown rice, wild rice, nuts, raw veggies,flaxseeds, seasame seeds, sunflower seeds, pumpkin seeds, berries especially blueberries and lots of veggies to your diet.
If you want to add more spinach to your diet, try adding it to a smoothie. My fave is spinach, banana, blueberry, plain nonfat yogurt and a splash of coconut-pineapple juice. I usually throw it all in the blender with a few ice cubes. I add a lot of spinach and it turns the smoothie green but you can't taste it because of the fruit. It is delicious and a great way to have more veggies!
