It's high in vitamins, more nutritious, denser than lettuce, more filling, and delicious. A friend at work told me about it and let me sample her very simple kale, feta, pine nuts, and dressing salad. I was very pleasantly surprised. I am excited about salads again! Oh, kale keeps longer too!

I've chosen to add a bit more 'nutritional oomph' to my salads by using kale instead of lettuce. Kale is an awesome cruciferous veggie that's packed full of nutrients and boasts quite a few potential health benefits, not to mention it tastes pretty good! It works well as a salad and because it's a bit more sturdy than lettuce it holds up well to added dressing and warm toppings.
Eating lots of veggies such as arugula, Asparagus, spinach, kale, cucumber,and collards, Cabbage, Broccoli, spinach, Celery, Cauliflower, Okra, onion, green beans, carrots, Kale white mushrooms, Turnips, romaine lettuce, red & yellow peppers, these are low in calories and carbs...may help accomplish weight loss
