If you have a package of mushrooms that's almost too old to use, sauté them in 1/2 Tbl of butter with 1 chopped onion. When they're almost done, add 1 Tbl white wine, and cook until all the liquid is absorbed. Repeat wine addition 1-2 times until mushrooms seem to have absorbed all they will take. Really good as a topping for meats.

If you use some Pam in your pan you can omit the butter and you can also use broth/stock in place of some of the wine if you prefer.
