Thaw frozen veggies into microwave or a steamer & toss them into soups, Dreamfield's pasta or brown rice. Broil sliced vegetables like zucchini, bell peppers, eggplant, & tomatoes for just a few minutes until they blacken around the edges. Serve warm with a low-calorie dressing of lemon juice, low-fat or fat-free mayonnaise, and black pepper or you can add tomatoes, radishes, green or red peppers to a tuna salad made with low-fat or fat-free mayonnaise or just a little Oilive Oil.

    This take time, but if you make several pans, you can put in mason jars to use later as a tomato sauce base.

Boil in enough water to cover, 1-2 pounds chopped carrots, 1 pound chopped onions and 4 or 5 stalks of chunks of celery until tender. I add 4 bay leaves to the water. When vegetables are soft, puree. Add 2 cans (28 oz) of diced tomatoes. Put in pint jars and seal.

Depending on the season, you can add spinach, mushrooms etc.

When you need a sauce for lasagna, chili etc, just use this base as one part of your tomatoes. emoticon
