If I'm fixing dinner after church, I peel the potatoes and get them ready. I turn the burner on and start them to boil then turn off the burner and let the pan sit on the burner. When we get home they are done and not soggy.

    I do the same thing with rice - whether I bring to boil or not, it starts to absorb the water while I am out. then I just bring to boil and remove from heat when I get home and it will cook while I get everything else done.
