If I start to get bored with fresh or steamed veggies I place them in the oven on a low heat over 1 to 2 hours. I use olive oil to lightly coat them. Vegetables I roast are, potato, sweet potato, carrots, capsicum, parsnip, pumpkin.
You can then add them to a salad of lettuce and tomatoes. Or if hungry have some as a snack. It is good to have healthy edible food in the fridge. so if you feel hungry outside of normal mealtimes there is nothing nicer than a caramelized parsnip or carrot.
