A Sweet Way To Eat Veggies.

If I start to get bored with fresh or steamed veggies I place them in the oven on a low heat over 1 to 2 hours. I use olive oil to lightly coat them. Vegetables I roast are, potato, sweet potato, carrots, capsicum, parsnip, pumpkin. emoticon emoticon emoticon

MORE INFORMATION:
You can then add them to a salad of lettuce and tomatoes.
Or if hungry have some as a snack. It is good to have healthy edible food in the fridge. so if you feel hungry outside of normal mealtimes there is nothing nicer than a caramelized parsnip or carrot. emoticon

    I do the same, adding herbs. Found that dried thyme, oregano and dill to add a nice flavor...

    this is a great idea. i don't like veggies, except potatoes and sweet potatoes. i will give this a try.

    One year for Thanksgiving I roasted broccoli, cauliflower, carrots, celery and onions, mainly so I would have something healthy for Thanksgiving dinner. Turns out my family loved them and now requests that I make them for every holiday!

    I totally agree, Baked, broiled, BBQ'd adds various flavours to all the veggies we love. Try some new veggies daily, you'll never know what you'll love...
