I have always been a fried egg eater. Knowing fried is not good I tried to poach some eggs and I discovered that poached is not only better for you but BETTER! I don't have to try to flip it without breaking the yoke, there are no gross hard yucky edges and it is easier to tell when it is done. Also, I get lots of protein without the added fat. My new favorite egg!
To make a poached egg (or two!) just boil enough water to cover the egg and slide the egg into the boiling water. (I have found a skillet works best but small saucepans work too) Give it about 3 minutes (longer if you like the yolk hard) and your egg is poached and ready to eat.
