As soon as I get home from the grocery store, using my food scale I weigh out the chicken breasts. The first few times I was amazed at how big the chicken breasts were. I wonder how many extra calories I had been consuming all these years?!?

I like to add grilled chicken to salads. I season boneless skinless chicken breasts with different flavors of Mrs. Dash and grill them. I divide the breasts into 3 ounce servings and freeze in ziploc bags, labeling with seasoning flavor. I usually use romaine lettuce and various vegetables; I don't like salad dressing so I use salsa instead and add a serving of shredded cheese on top.
Cook in Bulk & Freeze the excess for quick, healthy meals later.
It takes just as long to cook 6 chicken breasts as it does 2. I buy bulk chicken/meat and then I cook it all up. I reserve my portion for cooking that night and put the excess into serving size baggies and freeze. The next time I need it, it's already cooked and dinner's a breeze! I also get my hubby to grill a bunch of meat and do the same trick with it.
