In our household, I tend to take advantage of produce sales and abhor waste. I chop all of these individual items and keep them separate, then bag them in freezer bags. When I need them, I can have an instant Mirepoix for cooking or anything else!

Poach a whole chicken with aromatic veggies and herbs. You'll have great stock for making soup or adding to other recipes (rice, veggies) and the cooked chicken is great to add to sandwiches and salads.
Buy a whole chicken. It's much less $$$ than parts. Simmer it on med. heat for about 90 mins in a stockpot with onions, garlic, carrots, celery and some aromatic herbs. It's easy to remove the skin and bones once cooled. Chill the stock to easily remove the layer of fat.
When chopping onions, garlic and celery, I chop multiple onions, celery and garlic and put them in snack size baggies to store in the freezer. That way when I need to cook something with them in there, I just pull a bag out and it's already done!
Don't throw out those old withered veggies in the fridge - make broth!
I never get through the whole bunch of celery before it starts to get rubbery. What a waste of $! But not if I throw the whole thing in a pot of water, chuck in a few carrots, garlic, onions, garlic, peppers, herbs - whatever else will get thrown out. Boil for a while then freeze for later!
