Ingredients: 1 can whole coconut milk 2 mangos, diced & pureed. Set aside a little of the fruit. 1 egg yolk 1/4 tsp of cinnamon 1 tsp vanilla
Peel & dice the mangos. Set about 1 cup aside for later. Puree rest in a blender. Bring the coconut milk to a low simmer in a saucepan, just bubbling around the edges. Stir with whisk while bringing up to temp. Beat the egg yolk in a small bowl. Take some hot coconut milk & slowly & carefully drip it into the egg yolk while whisking it.
You want to temper it & bring it slowly up temp. Add the coconut milk + egg mixture into the saucepan of coconut milk & bring back to a low boil. Keep whisking until it starts to thicken. Takes time! Turn off heat, add vanilla, cinnamon, mango puree, cool in fridge 1 hr. Serve w/ diced mango on top

Save a ton of calories over regular coconut milk and even light coconut milk - use Vanilla Almond Milk with a dash of coconut extract added instead!
Just a touch of extract is all you need and you can use the sweetened vanilla almond milk for 60 cals per cup or the unsweetened vanilla for 40 cals per cup. It's more comparable to Light coconut milk in consistency.
