If you fill up the sink with hot soapy water when you start cooking/baking, then drop your used (and not to be REUSED) dirty items in it as you go (such as mixer beaters, mixing bowls, measuring cups, etc.) you will have counter space left to work and your dishes will be soaked and ready for a quick wash while your food is cooking/in the oven. By the time dinner is ready, your kitchen is tidy and there's no post-dinner mess to contend with!

One doesn't have to spring clean all the time ........ in fact LESS if you are vigilant about picking up after yourself and having a place for everything.
