    I wonder if microwaving has the same effect. I often take half a sweet potato with me on night shift, nuke it, add a bit of low fat cheese and salsa or spinach. Filling, easy and nutritious.

    I did not know that. I love baked sweet potatoes but I'd really like to know what makes the difference.

    I used to think sweet potatoes were "bad" because they were a carb. I have since learned the wonderful nutrients in them and I find that I eat one every day or every other day! emoticon
