I love to eat bacon but when I started eating healthy we changed to Turkey Bacon. The problem is when you cook it, it seems to get rubbery and doesnt come close to regular bacon. I discovered an easy remedy for this. Use a glass microwavable plate and cover with a papertowell. Lay out the Turkey Bacon on the papertowell (2-4 pieces) cover the bacon with another paper towell and cook in microwave for 1 min at a time. Check it after each min and continue at 1 min intervals until it is crispy.

If you don't like the fake bits, or the fatty ones, cook up a batch of turkey bacon and grind it up. It keeps great in the freezer and even if you don't like the taste of turkey bacon over regular bacon, in bits sprinkled on salads and such they're pretty tasty!
