Encourage serving sizes, particularly with treats, by using cute, elegant, or personalized serving sized dessert dishes.
I found fun, polka dotted, ice cream dishes cheap last fall, and I noticed that everyone in my family was eating closer to correct servings. (Sons pile it high - had to nip that in the bud.)
My older daughter moved in, bringing very pretty "crystal" dessert cups with stems. I feel like I am having something very special... but even better, only a serving.

This is a very quick, fat free and delicious side dish.

Spray a non stick skillet with a little cooking spray and get it very hot. Add chopped mushrooms and stir them continuously to prevent sticking. They give up their liquid first and then as it evaporates they carmelized and turn out delicious. Sprinkle with salt and pepper and serve.
I peel the fresh ginger, wrap it up in cellophane in big pieces, and then when I need it, I just GRATE some of the fresh stalk into the pan. This works very well. I always used to let the fresh ginger ROT by mistake. I heard this from Doctor Zorba Pastor on Your Health (Radio Show)
