I just got a book all about drying your own food at home. This is going to work great b/c we do a garden every year, I cant wait to get my dehydrating on!
Dehydrating works great to keep large quantises of fresh veggies/fruits on hand year-round, its also a great way to know what you are eating and putting into your food since you've handled it start to finish!

I hand wash plastic containers and air dry them in a dish drainer. They dry quickly. By not having them in the dishwasher, the dishes, pots, pans and flatware get completely dry instead of the water clinging to the plastic and therefore keeping tops of glasses and cups from drying. (I suppose I could wash the plastic in the dishwasher and take them out to air dry when the wash cycle is done, but then I'd have to pay attention to where the washer is in its cycle.)
During the summer, I raise herbs in the garden and dry them. I buy fancy containers at the dollar store and give the herbs as gifts to family and friends. I hang the drying herbs upside down in paper bags that are tied closed. Keeps them clean and keeps all the herbs in the bag. 334
