So Grateful For Gluten-Free and Dairy-Free Options!
I have multiple food allergies and gluten intolerance, and I feel immense gratitude every day that the world of specialty food options has come so far. When I was first diagnosed, 18 years ago or so, there was almost NOTHING on store shelves that I could eat - I subsisted on celery sticks and lint. Today, I had Tofutti dairy-free soy "cream cheese" on Rudi's gluten-free bread (toasted), and it was SO DELICIOUS! I never take the awesome things I can still eat for granted. AND...(see below)...
...I write "thank you"s to the companies that make the awesome products that I buy - So Delicious, Rudi's bakery, Udi's, Lucy's gluten-free cookies, etc. Often they send me coupons in return, and I feel like there's a better chance they'll stay in business if they know they're loved and valued.
