I find that my week goes by easier when I cook at least two meals over the weekend and prep all my food and vegetables by washing, chopping and cutting and putting them away in tupperwares for easy access during the week.

In addition to batch cooking on the weekend, I brown my ground beef (all of it) as soon as I get home from the grocery store. We don't eat many hamburgers. It saves time because it cooks more quickly because it's not frozen and is ready when I need it later that week: shepherd's pie, chilli, etc.
The number one thing that worked for me was cooking ahead on weekends so that I have food prepped for the week, having breakfast ready the night before, packing my lunch & snacks, and have dinner menu planned ahead of time. It keps me from the drive-thru & mindless eating!
