Forget about those horrid processed low-fat cheese creations. Get yourself a wedge of really excellent Parmigiano Reggianno and one of those high-quality microplane graters. They come in various sizes. Get one for hard cheeses.

If you're a pastry lover like me, here's a treat that will help to satisfy your morning pastry craving: toast a whole-wheat English muffin, then top the halves with 1/4 c. part-skim ricotta cheese.
