OK, not truly "spaghetti". But shiritake tofu noodles have a look, texture and taste that are fairly close to pasta noodles -- delicious! And a 4-oz serving is only 20 calories.

Shape-Shifter: You may need to ask one of the clerks for assistance in locating them. In the grocery store I mainly shop at, the House Foods shiritake tofu noodles are stocked in the refrigerated section of their Health Market aisles. They're very easy to overlook, if you don't know exactly the packaging you're looking for.

Sheryl: Oops! Left one step out. When you first put them in the colander, rinse them really well, then let them finish draining before putting them into the microwave. The whole process takes about 3 minutes, and the noodles will be ready to take on the odor and flavor of your sauce when you're done.

Sheryl: You're supposed to remove them from the package, and put them into a strainer/colander and drain them. Once drained, move them to a microwave-safe bowl, and nuke 'em for one minute. I usually put them back in the colander after I take them out, and let them drain really well for another minute. By the time I'm done, I don't notice any odor at all.

Please tell me how you prepare these noodles. I made them a couple of times and they sort of made me sick with the smell.

I found it. My store keeps their tofu in the refrigerated section of the produce department and that's where it was. I was surprised by the "interesting" texture. It's gonna take some getting used to, but it tastes fine (like tofu, no real flavor of its own). I just heated up a little pasta sauce and had a quick VERY low cal lunch. Yay!
