Anytime a baking recipe calls for eggs I use egg beaters. I also use apple sauce instead of oil for my cakes and sometimes in place of part of the butter. I then bring it to work (before I have any). This way I get the little bit I want but don't have it sitting around the house to tempt me later. My co-workers love the flavor and comment on the moistness, plus they are thrilled to know it has less fat/calories.

Great way to not add calories to cakes is to substitute diet soda for the oil, water and eggs. For a light colored cake, i.e. yellow, spice, etc., add a can of diet sprite. For chocolate cake, add a can of diet coke. It tastes just the same and very moist.

Sharing is awesome. Usually I only want one tiny bit of anything I bake (I'm not a sweet eater), so it's always great to give the rest away.

When I make muffins, cakes, or brownies, I substitute skim milk for the milk, applesauce for the oil, and egg beaters for the eggs. If it calls for 1/2 c. of oil, use 1/2 c. of applesauce. Egg beater conversion is 1 egg equals 1/4 c. egg beaters. This really cuts down on the fat and it doesn't take away from the taste.

I don't recommend substituting applesauce for oil in cookies though. It makes them too doughy.
Just be creative with substituting. I always use just egg whites. Applesauce for oil and the sugar (homemade with no add sugar) since the apples sweeten things enough. Shredded carrots in most cake and bars as they add moistness. I have found any recipe can be made healthy when substitutes used.
