Brown Rice

Brown Rice is a great whole grain, but takes an hour to cook. On Sundays, I cook up a full two cups of rice. I measure out my 1/2 cup serving for dinner, then refrigerate the majority of it in a baggie. It reheats quickly in the microwave and is yummy to use in leftovers for the rest of the week. It freezes well too.

    one week in the 'fridge is pushing it. I don't keep cooked rice in the 'fridge more than a day or two.

One hour? 50 minutes is the usually recommendation. Since I have a rice cooker I don't go by time anyway. Your best bet is to get a small rice cooker. Since you don't have to watch the rice the amount of time doesn't really mater. I put my rice on first and let it cook while I'm making the rest of the meal.

    I love having this in the freezer. It tastes so much better than white rice. I tried the cups of instant brown rice after reading about them on Spark ( blech!), planning ahead really pays off with this one.
