The fiber in eggplant can lower cholesterol and prevent the absorption of fat. It may also help in the prevent of cancer. Eggplant is a low calorie food, great for, a side dish, casserole, soups, stews, or as eggplant burger. Low in protein eggplant should be paired with a protein. Small to medium sized eggplants are sweeter. Controls blood-glucose levels and is low in carbs

MORE INFORMATION:
Brush eggplant with extra virgin olive oil and broil for 4 to 5 minutes on each side. Place a slice of Sargento Fat Free Provolone or mozzerella ontop of broiled slice and a slice of tomato. Grill another mintue. Remove, top with ground pepper. If you have another idea for eggplant, please submit

    I use eggplant in my low calorie spaghetti. It gives a flavor like meat without the meat.

    I've only tried eggplant once eggplant parmesan. That sounds tasty.
