I cook a whole pound of spaghetti or rice at once and freeze it in single serving sizes. This saves me time at night and I don't have to worry about how much dry spaghetti or rice to cook to get 1 serving -
I freeze it in self-sealing plastic bags (like Ziploc) and use a permanent marker to label the bag with the contents, quantity, and date -
Okay, I don't literally write on the wall. However, I do write my weight weekly on the mirror of my bathroom as well as a monthly waist and "gut" measurements. Since the bathroom is where I begin my day, it is a good reminder of the progress made and a motivator to stay on track.
All you need is a mirror or perhaps a dry erase board and markers to use.
