Califlower contains sulfur compounds that can help prevent heart disease, cancer and even diabetes. Very high in Vitamin C and has other good minerals. 2 heaping cups and only 60 calories. Good sprinkled with Parm, mashed in a potato or as a potato substitute, in soups, as a low carb raw veggie to dip, in salads raw & cauliflower casseroles. Lots of variety!
After cooking the 12 oz. bag of cauliflower, I added minced garlic, one Laughing Cow Light Blue Cheese and 2 T of non-fat Greek yogurt. I mashed it using a potato masher(and mashed it and mashed it.) It was just as good and just as comforting as mashed potatoes for less than 75 calories per serving.
I am going to try using a potato ricer which will give the cauliflower a fluffier texture.
