I like to keep black beans and chick peas in my fridge. When I heat a healthy (usually organic) meal, I've noticed that there is usually lots of sauce left over. I can add fiber to the meal by adding the beans. I add chick peas to curry meals and black beans to Mexican inspired cuisine.

I have found that if I throw a cup of frozen vegetables in a container in the morning before heading to work. When lunch comes I just throw low cal/low fat soup in with them and it makes a hearty meal.
