Zucchini is low in calories and mostly water. A small zucchini is more flavor and has vitamin C. Zucchini is particularly god in hot or warm weather to stay hydrated. Stem or sauté chunks and top with a little parm cheese and black pepper or make long strips in place of heavy pasta...you can also mix it with an egg and panko bread crumbs...fry in a little olive oil to make fritters.
You can save alot of calories and enjoy all your favorite pasta dish by just replacing the pasta with vegetables. Try replacing your pasta with zucchini, cauliflower or broccoli. It taste great and all the restaurant like Olive Garden, Macaroni Grill will be happy to replace the pasta for veggies.
