I have a 5 subject notebook. I write or paste articles of protein foods, high fiber foods, healthy fat foods, high calcium foods, etc. so when I am lacking a nutrient I just refer to my pages of my listed items and see how I can make it up.

Most keep a food or a fitness journal, but you should also keep a Compliment Journal. Anytime someone compliments you, write it down! Even when you don't notice your weight loss, someone does. When you are having a bad day, go read those compliments and perk right up.
I have a 3-sectioned notebook for fitness, nutrition and my copmpliments, but any notebook would work.
I keep a small journal style notebook in my kitchen. When I fix a quick, easy meal I jot down the ingredients and instructions in the notebook. When I am in a hurry and can't decide what to cook, I can just flip through the notebook to remind myself of quick easy meals
