I save all my vegetable peels, cores and ends in a gallon size bag in the freezer. When it's full, I dump it all in my crockpot with some water and put it on low for 8 hours. I would have just thrown out all those scraps, but now I have my own healthy vegetable stock!

You can add meat bones and scraps if you want too.

  • Thank for sharing this idea. I have been using dried vegetable blends or seasoning trying to make vegetable stock but the flavor was sort of weak. I think your idea of using peels, cores and ends will make the stock much more flavorful.
